Wanted to try out my new cheap stand mixer (£60, 1500 w) after disaster last year, my hands can’t do the hand kneading anymore, decided to follow a recipe for a change, fresh yeast is definitely the best. Buns turned out really well but I hadn’t completely read the instructions as you were supposed to let them Rise twice before shaping, a bit old school that, but not necessary as it turned out. One thing I loathe in the uk and that probably does make me old fashioned is these are fruit buns, not choc chip or salted caramel, agree?

Totally agree, they should be dried fruit and mixed spice only. Variations are just a marketing exercise. We use the dough option on our breadmaker which does all the mixing and kneading and finish them in the oven.

Aren't you a bit early with those, traveller? A Good Friday treat surely - though I grant you that they seem to be on sale in shops straight after Christmas these days! Yes, only dried fruit in mine, please...

Definately with dried fruit, I haven't made them before as Waitrose sell them all year, I love them neat, no butter and definately not toasted

Yes, only dried fruit in mine, please... Yes I am but after last years disaster I needed the practice. You’re right about Good Friday, on the Thursday evening mum used to send us off to church and then get on with the baking.

I'm guessing that it would be illegal to sell hot cross buns in France due to their non sectarian rules?
