It is looking likely that, after many years, we will have to find my mother's chutney recipe. When we had our house in France the area we were in killed off everything that we grew in the solanum family with a blight. That is tomato and potato. Now back in the UK we can grow tomatoes with impunity in my wife's greenhouse. Only 6 plants but they are laden with fruit. They have just started ripening and already we are inundated. Friends and neighbours avoid us so as not to be given yet another bag of them! I have always wondered though how green tomato chutney came out brown!

Horrible stuff! What you need are a few peppers, aubergines, courgettes, onions and garlic cloves. Make a big panful of ratatouille and sterilise it in Kilner jars. Wonderful base for soups and sauces all winter long....

Aubergines are members of the solanum family also. To us they are tasteless rubbish. However we cook them they turn black.

Aubergines are members of the solanum family also. To us they are tasteless rubbish. However we cook them they turn black. Not my favourite veg either. That's why I hide them in ratatouille and the occasional moussaka Sod's law, they grow really well here.....

Aubergines are members of the solanum family also. To us they are tasteless rubbish. However we cook them they turn black. We grow and eat loads of aubergines , one of our favourite vegetables , they are great with coriander and cumin roasted in the oven , hot or cold , yummy.

I will ask Jen , the exact way to do it , she is the aubergine wizard and had never eaten them before coming to France.
