If you are down Cork way I'd recommend visiting Clonakilty. For some reason it's become a magnet for all sorts of hippy/minority/generally unconventional types. Nice wee town, too. Cobh is interesting as well and you can take a trip across to Spike Island in the harbour which is very interesting.

I was thinking of the Old Castle bar which is on Tirchonnaill Street just off the Diamond. You'll love Galway. To be fair, you can't go far wrong anywhere on the West coast. Do you go down as far as Cork? I desperately want to move back and am trying to persuade OH that the Atlantic coast isn't too Storm battered! ‘Fraid not, we’re off back to Dublin tomorrow for a night and then the ferry back to Cherbourg. Galway is great btw, back into town later for the usual pint of black stuff and a bite to eat….

Don't know your eating habits but if you like really good burger and chips at not much money then check out Bunsen Burger. I think they have 2 outlets in Dublin. Its not a chain outfit. And if you want to be royally ripped off, take yourself to Temple Bar!
