I can't remember eating turbot, I certainly haven't eaten it in France, so I was intrigued enough to look it up. It seems, like the once noble salmon, the turbot has suffered from commercial 'élevage' : from loceanalabouche.com/poisson-turbot/"Le turbot est rare, de chair fine et recherchée. C’est pourquoi, des élevages ont vu le jour. Lorsque le turbot est issu d’un élevage, son prix à la vente est moins cher. Cependant, il est moins bon en goût et en nutriments que les turbots sauvages. Ils sont en effet plus gras et leurs graisses sont de moins bonne qualité.
Le turbot est considéré comme le plus fin et le plus noble des poissons plats." So you now perhaps need to ask is it 'sauvage' or 'élevé' - what a shame.

A wonderful fish, we had it as a course the other week at La Barbican in Carcassonne. Can be expensive when found. I would rate it as equalish to L'Omble Chevalier.
