All boulangeries I have visited here have prefilled baguettes, eg jambon beurre, rosette cornichons, américain jambon/thon/poulet etc etc.
Back in the old days, when I worked in Winchester there was a sandwich shop I used to use which had all the ingredients laid out and you could choose what ingredients and what variety of bread and the sandwich was made up on the spot, eg prawn, avocado, and walnuts on granary slices, or pepper salami, cream cheese, and tomatoes on wholemeal - has anyone seen anything like that here in France?

There was an independent sandwichery like you describe in my home town in the UK. The selection and quality of fillings and types of bread was mouthwatering.
There is nothing like that around us and the selection of packaged sandwiches in the supermarket is really limited and the quality is poor.

I remember one in Sheffield years ago, and also one in Keswick, both independent.
Now, as Ibis observes, they all seem to be chains.

There are a dozen independent sandwich shops in my home town (Norwich) plus the usual chains (Greggs, Subway and Pret), our nearest Subway here is an hour away so your only option is soggy supermarket fare.

I thought I was becoming decadent and lazy regretting the lack of takeaway restos that deliver, especially after a 10 hour day in the garden, but sandwiches??? Is it really too demanding to sling together a sandwich?

That's the point, I think. It's not at all difficult to make a sandwich, but the variety of bread and fillings viable in a household is much smaller than for a commercial operation.
I remember one called Dragon's Breath. Garlic sausage, pepperami, chorizo, some sort of chilli sauce, cheese, pickle ...
Whatever happened to garlic sausage?

Agree Jackie - not that I am in a position to buy sandwiches most of the time And further, the fillings are fresh. Yes I can put a sandwich together any time a like, but the meat was probably bought up to a week ago. If it was a fresh pack, then I will have to eat up the rest in the next couple of days. Ditto the cheese. Salads - OK this time of year fresh from the garden. Mid winter? cannot be bothered to look if there is anything under the snow.

I gave up buying mayonnaise and related sauces a long time ago as they're so quick and easy to whizz up. Can't grow lettuce for toffee, but there's always some rocket, mache or mesclun kicking about in the polytunnel. I'll never completely get rid of the paranoia engendered by living 20kms from a decent supermarket, so the pantry is always well stocked with tinned tuna, chorizo, jambon sec and home-made pickles
