We were recently at the notaire for the first signing of a property. When looking at houses I wasn't actually looking for something with rental possibilities. However, the place that we are in the process of purchasing has an old building that could become a nice 3 bed house. (Needs total renovation) And because it is in such a beautiful location, my thoughts have now been turning towards eventually turning this into a gite. Note that it would be at least 5 years before that becomes reality as there are some other things that we want to do first and that we won't be there full time at first.
For rentals, I presume that it would be better to have a registered business. Can we easily do this at a later stage and transfer the gite to the business, or should I see to it now, before the purchase is finalised? I realise of course that there is a possibility that we startt a business and then never actually rent out the gite.

Concentrate on the conversion, test the market if you want to rent it when it's complete, avoid gite de France. Setting up a business is a real pain and not necessary for a seasonal gite. Check with the marie about tourist tax and potential other taxes. You will need to get permission for the conversion and pay tax on it when the services are connected, water, electricity, sewage.
