I am thinking about replacing the Ariston gas hob we bought in France many years ago. I find it confusing trying to compare the various makes I have found online in both the UK and France.
On the basis that they all do the same thing I assume it is all down to the size and layout I prefer and the quality of the fittings.
I would be grateful for any advice from others who know more about the subject than me, including whether or not UK and French gas connections are an identical size (we use gaz de ville).

We have a Siemens .. it's very controllable, more so then the first hob we bought.

I have just installed a new Smeg range unit. Made in Italy, bought online, it had a very long delivery time maybe because we had room only for a 70cm unit. Nice hob, good cast iron pan supports. Don't forget to check which gas nozzles are fitted and which you require. These are supplied with the unit and instructions are very clear as to which size you need for which gas (propane, butane, town gas etc. The burners then need to be adjusted for flame size with a longish small screwdriver at a screw under the knob of the hob ( or hobknob). These instructions are practically the same for all hobs.

We have a Siemens .. it's very controllable, more so then the first hob we bought. I would second the choice of Siemens, we have a couple of their domino units.

Have you thought about an induction hob? Instant like gas but no fiddly bits to clean.

We replaced a gas hob with an induction. My wife says she wouldn’t go back to gas. We have a plug in induction hob that we cook on until I get round to the new kitchen. My wife can't wait to get back to a gas hob. 😩 Each to their own.

I have a gas hob, a Faure. White glass, about 10 years old. Very pleased with it except for one thing. I wanted to be able to reduce the flames on at least one ring to almost nothing for those things you need to cook on very low heat. And whilst in theory you should be able to do it, it doesn't go low enough. Problem solved by buying a heat dispersing plate which sits on top.
