We often buy escalopes de dinde but never see any other joints/pieces of turkey. I wonder what is done with the rest of the meat. A friend used to bring on about 10,000 day old chicks and sell them on at about 6 months for breeding not eating. There must be a lot of turkeys out there. I know there are quite a few in the UK government.

When I roasted them you could have had a 'blind tasting' game to guess what food you thought it was. It was utterly tasteless.

The trouble with the butchers' departments is that tey tend to source a lot of things locally, so what is available here in Southern ARA may not be available say 100km away.

Yes, whole turkey legs or slices with a bit of bone in the middle, which they call "osso bucco de dinde" - cheaper than osso bucco made in the usual way with slices of veal. Our SuperU also sells whole turkey breasts (1 kg).

For me that is a problem with most turkey products - little taste - and one reason we never have turkey at Xmas(am I allowed to use that word in August?). For the legs, loosen the skin at the thigh end and insert some chestnut stuffing between the skin and the flesh. [ Chestnut stuffing - mix chopped onion, bread crumbs, minced meat (farce des legumes or Char**), chopped chestnuts, good sprinkling of herbes de Provence, an egg to bind and some butter] This at least will provide some flavouring. ** That should of course be Chair not Char - no tanks in my stuffing

I really like turkey. The problem with buying those legs from the supermarket is they have a lot of sinews which you need to remove and that’s quite a difficult task for me. I like the Osso bucco idea though I’ve not seen those yet.

Those enormous turkey legs etc they sell in the supermarkets are completely off-putting to me. I’d rather get my cheap protein from veggie sources than eat intensively reared, monstrous looking stuff like that. Sorry.
